How can I edit the BaseConfig.xml xml, conversion, default, iPhone, convert

I try to add more options for conversion to the pre-define list under conversion so I can convert iPhone at 512 instead of 1024 on the server side.  In the client side option is there to change the default from 1024 to 512 by sliding the "bar".  How can I do that on the server side?
